Your
cook will plan menus around hearty and varied breakfasts, light lunches and long
generous dinners.
She
will prepare traditional American fare including chicken, fresh fish and
lobster, beef, pork, lamb and pasta ... as well as her own unique mix of
Jamaican specialties including ackee and saltfish, delicious homemade soups and
desserts, curried goat and everyone’s favorite, jerk pork and chicken.
My
happiest culinary weeks in Jamaica have been when I have said to the cook,
“I’ve come here to stop making decisions. The word is out that you’re a
great cook. Show me your best!”
Needless
to say, if you have allergies or wish to avoid specific foods, just let us know
and we’ll inform your cook before you arrive. Any input you wish to have in
menu planning, you certainly may discuss with your cook on your second day at
the villa (before she does her major marketing). However, be assured that it is
not necessary for you to make any of the menu decisions. We suggest that you
simply give your cook the freedom to do what she does best while you relax.

beer and a bottle of Jamaican Rum.
